Ooey Gooey Lava Cake for two!

Are you looking for something perfect for date night or just girls night with your bestie? My Ooey Gooey Lava Cake is the perfect solution especially for those chocolate lovers. Add a little powdered sugar and/or vanilla ice-cream fresh out of the oven and it takes this recipe out of this world!
This recipe is super easy without sacrificing taste! It oozes rich chocolatey goodness when you cut into it, does it really get any better than that?I don’t think so.

1.Preheat your oven to 425 degrees F. and lightly spray your ramekins with cooking spray.

2. Melt you butter and chopped chocolate (not chocolate chips) together in the Microwave. Start with 3o seconds, mix, and another 30 seconds. Continue mixing until melted.

Brooke’s Ingredients: I used a Hershey’s Special Dark Chocolate Bar. I used my food scale but to reference I almost used one full bar minus approximately 5 squares.

3. In either a bowl with a hand mixer or a stand mixer combine the sugar, egg, egg yolk, vanilla, and salt. Beat until light and pale in color. It will also be a bit foamy. About 2 minutes.

Can you still make this without a mixer?
Yes, you most definitely can! I only recommend a mixer cause it makes this recipe so much easier and quicker. If you mix it by hand it will take a little longer and you’ll have to put some of your back into it. But that can be a plus right? Getting a workout in while making a dessert, its a win-win!

4. Whisk in the flour to the egg mixture until combined.

5. Add the chocolate to the egg mixture and mix softly until combined.

6.Pour the mixture evenly into your two sprayed ramekins

7. Bake 12-14 minutes until edges are set but the middle is still soft. You want the inside to ooze out when you cut into them!

8. Top with Powdered Sugar and/or vanilla ice-cream and dig in!

Feel free to get creative and add any toppings you want. Whipped cream? sure! Crushed oreos or Reeses? Hell yes. The sky is the limit.
I personally enjoy mine with some classic vanilla ice-cream. You just can’t go wrong.
